I decided to create a series of recipes called “Comfort Foods for 1”. These recipes can be used on your self-care days as a way to treat yourself with something nice, healthy and wholesome. T
There is no better way to start these series with one of my favourites, Mac and Cheese!
I made a vegan style with one of the best vegan cheese’s in the market; Faumagerie Zengarry!
I hope you enjoy it as much as I did!
Vegan Mac and Cheese Bowl
70 g of Brown Rice Penne
2 heaping tablespoons of zengarry Creamy Swiss Gruyère style cashew cheese
1/2 cup of cashew milk
1 tablespoon of nutritional yeast
1 teaspoon of salt
1 teaspoon of turmeric
1/2 teaspoon of paprika
1/2 teaspoon of black pepper
a pinch of coriander
Fresh spinach and fresh oregano to garnish
Bring water to a boil and add the brown rice penne.
Once cooked, drain, and place cooked penne back in your saucepan.
Place stovetop on medium/low heat.
Add cashew milk and gently stir.
Add Zengarry Swiss cashew cheese.
Stir occasionally as cheese melts.
Once sauce equally distributed with pasta take the pan off off of the stove top an place somewhere cooler.
Add spices and nutritional yeast.
Place mac-n-cheese into your bowl.
Garnish with fresh spinach and fresh oregano.
